Easy Raspberry Jam

The easiest jam I’ve ever made

Ingredients

4 cups fresh or frozen raspberries

1 cup granulated sugar

Directions

Put the fruit and sugar into a large saucepan, and bring to a boil. Reduce heat, simmer, stirring. Skim off any foam. Stir until slightly thick, 20 to 30 minutes. Let cool. Ladle into sterilized jars. Seal.

Spirited Fruit Preserves

Makes two 7-ounce jars

You’ll need to make room in your refrigerator for this one, but it is well worth it to have on hand to give as a special gift.

Ingredients

One 12-oz jar of fruit preserves

2 tablespoons of liquor

Directions

Combine the preserves and liquor in a saucepan and bring just to a boil over medium heat, stirring periodically. Spoon into sterilized jars, cover tightly with the lid. Keep refrigerated. Will last for twelve months or more.

Great combinations: raspberry preserves and rum; whole cherry preserves and bourbon; citrus marmalade and scotch or rum; definitely apricot with brandy or bourbon.
